The first time I met Cedric Dickens, great grandson of him what wrote all them nice books about Artful Dodgers and Pickwickians, we sat and drank a bottle of port. Cedric and I found our tongues looser and our dispositions energized as we became more familiar with the bottle of Grahams sitting on a small table alongside a copy of Great Expectations. One always has great expectations when pouring a glass of Grahams, because it's pedigree seems to date back as far as history itself. W. & J. Graham's has been producing Ports for over 170 years and in 1970 the Royal Family of port -The Symington Family - acquired Graham's. Besides Graham's the Symingtons head quite a dynasty of Port Houses. Their Empire includes: Warre, Dow's, and Smith

Woodhouse. In other words, the wine world's version of the Crown Jewels. But unlike the Queen's trinkets, for wine lovers these liquid gems are far more precious.

There's really not much you need to know about port, other than it goes sinfully well with Stilton cheese which has been allowed to warm up to room temperature. And as the name suggests (just in case you were afraid to ask the obvious) the wine comes from the Douro Valley of Northern Portugal. Grahams' ports are stored at the Graham's lodge in Vila Nova de Gaia, near Oporto in northwest Portugal, where they mature over long periods of time. The grapes which are blended together to make port are totally

unpronounceable, and knowing their names won't enhance your drinking pleasure in any way. However, opening a bottle will remedy that deficiency immediately. Aged Tawny ports are matured in cask for 6 or more years before bottling and they metamorphose into a sumptuously flavored tawny colored elixir. The wine is rich, sophisticated, elegant and fills the mouth with a soft velvet texture laced with an almost chocolate and almond thread. Describing port is as futile as describing a Dicken's character. You've got to experience it for yourself to fully appreciate it's true brilliance and complexity. This particular selection is simply Heaven in a glass.
