Chaumes

Produced in the Dordogne in southwest France, this is a semi-hard cheese which is rich and creamy with a slightly nutty flavor..yet pleasantly mild The soft rind is an orange-golden color. This particular cheese, made from cow's milk, is quite addictive, and lured me into the kitchen for frequent nibbles. (Fat content: 50%).

Note: Be sure to buy your cheese from the "fresh cheese" counter, and have it cut fresh in the store. Also avoid buying more than you need for a couple of days, since the freshness deteriorates after long term storage in the fridge.

Tenuta Villanova Tocai Friulano 1999

It's sheer coincidence that I live near the University of Villanova, although I must confess, curiosity did get the better of this cat.

Tenuta Villanova is situated at Farra d'Isonzo, a small village in the Collio DOC (highest category of grape production in Italy) zone of Friuli-Venezia Giulia, in north east Italy. The Tocai grape excels in this region, and indeed, from this producer.

Ideal for summer sipping, I found the wine to have a nutty, slightly figgy flavor. The fermentation in stainless steel gave the fruit plenty of opportunity to "be itself" and the aging in vats rounded the overall taste and added a fuller complexity to the character of the wine. This is a fresh, soft, warm and friendly white wine which definitely comes top of the "quaffable" list for summer silliness around the barbecue or as an accompaniment to serious gastronomic repasts.

The wine was caressed in cellars once vistited by the likes of Louis

Pasteur, during Villanova's centuries of winemaking.
