Old Amsterdam (Aged Gouda)

Holland's most important cheese is Gouda, which originated in Gouda in the 13th century. Made from full milk, young Gouda is aged from 1 to 4 months and is mild and buttery. The aged version is often ripened to a full year and the result is a darker, fuller and richer cheese. Old Amsterdam is an extra-mature Gouda cheese with a rich and robust flavor - The "Premier Grand Cru Classé" of extra mature Gouda. The flavor is slightly smoky which complements the Hedges Fumé Chardonnay brilliantly. The fat content is 48%.

Most people talk about the "Left Coast" and we all know what they're talking about - California! Well, when I say "Left Coast" I mean the entire coast, from the bottom bit around LA to the top bit which includes the "other" Washington - not the one with the sinful Oval office, but the one which has an entire State bearing it's name.

Tom and Anne-Marie Hedges liked Washington so much, they built a winery there in 1987. And that's not surprising since the state is one of the greatest wine producing regions in the world. Tom fell in love with the Red Mountain appellation of the amazing Columbia Valley, and it's here he grows the grapes for several of his wines - including the Fumé Chardonnay.

This particular wine is a blend of Sauvignon and Chardonnay, and I'd like to think I was the first to discover it, but to be honest, it already has something of a cult following.

The wine has a honeysuckle and lemon scent, with flavors of

pineapple and melon. The Chardonnay pops through with a toasty vanilla flavor. And I particularly like this wine because it's ready for instant satisfaction, no need to be stored...just pop the cork and drink it as soon as you get it home.
