One of my absolute favorite cheeses. Rich, creamy and decadently delicious. This is a full-fat, soft cow's milk cheese with 75% butterfat. A dairy-made triple creme, soft surface ripened cheese, made from pasteurized milk, with a white downy, edible rind.

Note: Be sure to buy your cheese from the "fresh cheese" counter, and have it cut fresh in the store. Also avoid buying more than you need for a couple of days, since the freshness deteriorates after long term storage in the fridge.

Trimbach Pinot Blanc 1998

Alsace is the region of France with a German personality. The houses look German, the wine bottles look German but the people are as French as a tilted black beret, a baguette under the armpit and a Gauloises fused to the lower lip.

The firm of Trimbach has been grape stomping for over three and a half centuries and they still haven't grown bored with the business. Lucky for us! They own 70 acres in Ribeauville and also acquire grapes from farmers pottering about in the neighbouring 250 acres. Trimbach produces about 80,000 cases of wine each year, which is a mind boggling amount of grape picking during harvest!

Two varieties are blended in equal proportions for this wine. Pinot Blanc imparts the greenish hues and crisp acidity...Pinot Auxerrois, from the "Auxerre" region, adds the golden glows and rich flavours giving the fullness to the body.

The Trimbachs believe that separate vinification to each grape is

crucial to the success of the final blend. The wine has a golden color with a fruity, zesty, citrus perfume. It has a dry, medium body with apple and citrus fruit flavors and, like any good Frenchman, it is exceptionally smooth.

Grapes Pinot Blanc & Pinot Auxerrois

Technical Grapes were sourced from 150 growers in the region. Gentle pneumatic presses were employed to obtain the highest quality juice. Each variety was vinified separately and fermented to dryness.

Serve Chill for 20 minutes in fridge.
